These banana pudding cheesecake bars are creamy, sliceable, and perfect when you want banana pudding flavor in dessert bar form.
Ingredients
- 2 cups crushed vanilla wafers
- 5 tbsp melted butter
- 16 oz cream cheese, softened
- 1/2 cup sugar
- 2 eggs
- 1 tsp vanilla extract
- 1 ripe banana, mashed
- 1/2 cup sour cream
- 1/2 cup instant banana pudding mix
- Whipped cream and extra vanilla wafers, for topping
Directions
- Heat oven to 325 degrees F. Line an 8-inch square pan with parchment.
- Mix crushed wafers and melted butter. Press into the pan.
- Beat cream cheese and sugar until smooth.
- Add eggs one at a time, then mix in vanilla, mashed banana, sour cream, and pudding mix.
- Spread over crust and bake 32 to 38 minutes, until the center is just set.
- Cool completely, then chill at least 4 hours.
- Slice and top with whipped cream and crushed wafers.
