Cauliflower chicken nuggets

These cauliflower chicken nuggets are completely meat-free but still crispy, crunchy, and snackable. Tender cauliflower gets coated and cooked until golden, then served with your favorite dip.

Ingredients

  • 1 head cauliflower, cut into bite-size florets
  • 1 cup flour
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1 cup milk or buttermilk
  • 1 cup breadcrumbs or panko
  • Oil spray or oil for frying
  • Ranch, buffalo sauce, BBQ sauce, or honey mustard, for dipping

Instructions

  1. Heat oven to 425 degrees F or heat oil for frying.
  2. Mix flour, garlic powder, paprika, and salt.
  3. Dip cauliflower in milk, then flour mixture, then back into milk, then breadcrumbs.
  4. For baking, place on a lined sheet pan, spray with oil, and bake 25 to 30 minutes, flipping once.
  5. For frying, fry in batches until golden and crisp.
  6. Serve hot with dipping sauce.
