Colombian carne en bistec

Carne en bistec is thin beef simmered with tomatoes and onions until saucy and tender. Serve it with rice, avocado, and plantains.

Ingredients

  • 1 1/2 lb thin sirloin or round steak
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp cumin
  • 3 cloves garlic, minced
  • 2 tbsp oil
  • 1 large onion, sliced
  • 3 tomatoes, chopped
  • 1/2 cup water or beef broth
  • 2 tbsp chopped cilantro
  • Cooked rice, avocado, and sweet plantains, for serving

Directions

  1. Season beef with salt, pepper, cumin, and garlic.
  2. Heat oil in a large skillet. Sear beef briefly on both sides, then remove.
  3. Add onion and tomatoes to the same skillet. Cook until softened.
  4. Return beef to the skillet and add water or broth.
  5. Cover and simmer 20 to 25 minutes, until the beef is tender and the sauce thickens.
  6. Top with cilantro and serve with rice, avocado, and plantains.
