Ingredients
- 2 cups cooked white rice
- 2 tbsp olive oil
- 4 green onions, chopped
- 1 small onion, diced
- 3 tomatoes, diced
- 2 cloves garlic, minced
- 1/2 tsp cumin
- 1 tsp salt
- 1/2 tsp black pepper
- 4 fried eggs
- 1 avocado, sliced
- Sweet plantains, for serving
- Chopped cilantro
Directions
- Heat olive oil in a skillet over medium heat.
- Add green onions and onion. Cook until softened.
- Stir in tomatoes, garlic, cumin, salt, and pepper. Simmer 10 to 12 minutes, until saucy.
- Spoon rice into bowls and top with hogao.
