Colombian hogao rice bowls

These hogao rice bowls are simple, colorful, and perfect when you want Colombian flavor without a complicated dinner.

Ingredients

  • 2 cups cooked white rice
  • 2 tbsp olive oil
  • 4 green onions, chopped
  • 1 small onion, diced
  • 3 tomatoes, diced
  • 2 cloves garlic, minced
  • 1/2 tsp cumin
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 4 fried eggs
  • 1 avocado, sliced
  • Sweet plantains, for serving
  • Chopped cilantro

Directions

  1. Heat olive oil in a skillet over medium heat.
  2. Add green onions and onion. Cook until softened.
  3. Stir in tomatoes, garlic, cumin, salt, and pepper. Simmer 10 to 12 minutes, until saucy.
  4. Spoon rice into bowls and top with hogao.
  5. Add fried eggs, avocado, plantains, and cilantro.
