Sancocho de pollo is a cozy Colombian chicken soup loaded with big pieces of vegetables and finished with fresh cilantro and lime.
Ingredients
- 2 lb bone-in chicken pieces
- 10 cups water or chicken broth
- 1 tbsp salt, plus more to taste
- 1 tsp black pepper
- 1 tsp cumin
- 4 cloves garlic, minced
- 1 small onion, chopped
- 2 ears corn, cut into pieces
- 2 green plantains, peeled and cut into chunks
- 1 lb yuca, peeled and cut into chunks
- 1 lb potatoes, halved
- 1/2 cup chopped cilantro
- Lime wedges and white rice, for serving
Directions
- Add chicken, water or broth, salt, pepper, cumin, garlic, and onion to a large pot.
- Bring to a boil, then lower to a simmer for 25 minutes.
- Add corn, plantain, yuca, and potatoes. Simmer 35 to 45 minutes, until everything is tender.
- Taste and adjust salt. Stir in cilantro right before serving.
- Serve hot with lime and rice on the side.

If the yuca has a tough stringy center, remove it before serving.
