Crockpot Honey Garlic Meatballs

These honey garlic meatballs are sweet, savory, and ridiculously easy. Start with fully cooked meatballs, stir together the sauce, and let the crockpot do the rest.

Ingredients

  • 32 ounces frozen fully cooked beef or turkey meatballs
  • 1/2 cup honey
  • 1/3 cup ketchup
  • 1/4 cup low-sodium soy sauce
  • 2 tablespoons packed brown sugar
  • 4 cloves garlic, minced
  • 1 tablespoon rice vinegar or apple cider vinegar
  • 1/2 teaspoon ground ginger
  • 1 tablespoon cornstarch
  • 1 tablespoon cold water
  • Sliced green onions and sesame seeds for serving

Instructions

  1. Place the frozen cooked meatballs in the slow cooker.
  2. Whisk together the honey, ketchup, soy sauce, brown sugar, garlic, vinegar, and ginger. Pour the sauce over the meatballs and stir to coat.
  3. Cover and cook on low for 3 to 4 hours or on high for 1 1/2 to 2 hours, stirring once if convenient, until the meatballs are hot throughout.
  4. Mix the cornstarch and cold water. Stir the slurry into the sauce, cover, and cook on high for 10 to 15 minutes until glossy and thickened.
  5. Serve with green onions and sesame seeds. For dinner, spoon the meatballs and sauce over rice.

Tips

  • Keep the cooker on warm for serving, stirring occasionally so the sauce does not stick around the edges.
  • Check that reheated meatballs reach 165°F in the center before serving.
  • For a little heat, add 1 to 2 teaspoons of sriracha or crushed red pepper.
