Crockpot white chicken chili

This white chicken chili is creamy, mild, and easy to dress up with all the toppings.

Ingredients

  • 1 1/2 lb boneless skinless chicken breasts
  • 2 cans white beans, drained
  • 1 can corn, drained
  • 4 oz can diced green chiles
  • 4 cups chicken broth
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 4 oz cream cheese
  • 1/2 cup sour cream
  • Toppings: cilantro, avocado, cheese, tortilla strips

Directions

  1. Add chicken, beans, corn, green chiles, broth, and seasonings to the crockpot.
  2. Cook on low for 5 to 6 hours or high for 3 hours.
  3. Shred the chicken and stir it back into the chili.
  4. Add cream cheese and sour cream. Cook 15 to 20 minutes, stirring until creamy.
  5. Serve with toppings.

Mood Messy Tip

For a thicker chili, mash some of the beans before stirring in the cream cheese.
