- 1 (2-pound) bag frozen diced hash brown potatoes
- 1 (8-ounce) block cream cheese, softened and cut into cubes
- 1 (10.5-ounce) can condensed cream of chicken soup
- 2 cap full of dry ranch seasoning, or to taste
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1/2 teaspoon black pepper
- Salt to taste
- 1 (32-ounce) carton chicken broth
- 1 (9-ounce) bag real bacon pieces
- 4 cups shredded cheddar cheese, about 16 ounces
- Sliced green onions and extra bacon for serving, optional
Instructions
- Add the frozen diced potatoes, cream cheese, condensed soup, ranch seasoning, onion powder, garlic powder, pepper, chicken broth, and bacon pieces to a 6-quart slow cooker.
- Stir as well as possible. The cream cheese does not need to be completely blended at this point.
- Cover and cook on high for 3 hours, stirring once or twice as the cream cheese softens.
- After 3 hours, stir in the shredded cheddar. Cover and continue cooking on high for 1 more hour, or until the potatoes are tender and the soup is hot and creamy.
- Stir thoroughly, then taste before adding salt because the broth, soup, ranch seasoning, bacon, and cheese are already salty.
- Ladle into bowls and add green onions, extra cheddar, or more bacon if desired.
