Ingredients
- 2 green plantains, peeled and cut into thick pieces
- Oil, for frying
- 1/2 pound shrimp, peeled and deveined
- 1 tablespoon butter
- 2 cloves garlic, minced

- 1/2 cup roasted tomatoes, chopped
- 1/4 cup heavy cream
- Salt and pepper, to taste

Instructions
- Fry plantain pieces until lightly golden, then press each one into a cup shape using a tostonera or small cup.
- Fry again until crisp and golden. Season with salt.
- In a skillet, melt butter and cook onion until soft.
- Add garlic and shrimp. Cook until shrimp turns pink.
- Stir in roasted tomatoes and cream. Simmer until slightly thickened.
- Spoon creamy shrimp into plantain cups and garnish with cilantro if using.
