Fried plantain cups with creamy garlic shrimp

These fried plantain cups are loaded with creamy garlic shrimp, roasted tomatoes, and sauteed onions. The crispy plantain cup with the rich shrimp filling is the whole point.

Ingredients

  • 2 green plantains, peeled and cut into thick pieces
  • Oil, for frying
  • 1/2 pound shrimp, peeled and deveined
  • 1 tablespoon butter
  • 2 cloves garlic, minced
  • 1/4 cup diced onion
  • 1/2 cup roasted tomatoes, chopped
  • 1/4 cup heavy cream
  • Salt and pepper, to taste
  • Cilantro, optional

Instructions

  1. Fry plantain pieces until lightly golden, then press each one into a cup shape using a tostonera or small cup.
  2. Fry again until crisp and golden. Season with salt.
  3. In a skillet, melt butter and cook onion until soft.
  4. Add garlic and shrimp. Cook until shrimp turns pink.
  5. Stir in roasted tomatoes and cream. Simmer until slightly thickened.
  6. Spoon creamy shrimp into plantain cups and garnish with cilantro if using.
