Glazed lemon cake

This glazed lemon cake is soft, moist, buttery, and full of bright citrus flavor. The sweet lemon glaze soaks over the top and makes every slice hard to leave alone.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup butter, softened
  • 1 cup sugar
  • 2 eggs
  • 1 tablespoon lemon zest
  • 1/4 cup lemon juice
  • 1/2 cup milk
  • 1 cup powdered sugar
  • 2 tablespoons lemon juice, for glaze

Instructions

  1. Heat oven to 350 degrees F. Grease a loaf pan or small cake pan.
  2. Whisk flour, baking powder, and salt.
  3. Cream butter and sugar until fluffy. Beat in eggs and lemon zest.
  4. Mix in lemon juice, then alternate dry ingredients with milk.
  5. Pour into pan and bake 35 to 45 minutes, until a toothpick comes out clean.
  6. Mix powdered sugar with lemon juice.
  7. Drizzle glaze over cooled cake.
