Ingredients

  • 2 portions fresh ramen noodles
  • 4 cups chicken or pork broth
  • 2 soft-boiled eggs
  • 1/4 cup soy sauce
  • 2 tablespoons mirin or rice vinegar
  • 1 teaspoon sugar
  • 8 ounces cooked pork belly, pork shoulder, or thick bacon, crisped
  • 2 scallions, sliced
  • 1 teaspoon sesame oil
  • Chili crisp or chili oil, optional

Instructions

  1. Marinate the eggs. Peel the soft-boiled eggs and place them in soy sauce, mirin, and sugar for at least 1 hour or overnight.
  2. Crisp the pork. Slice the cooked pork and sear it in a skillet until browned and crisp at the edges.
  3. Heat the broth. Bring the broth to a simmer. Stir in sesame oil and chili crisp if using.
  4. Cook the noodles. Boil the ramen noodles according to the package directions, then drain.
  5. Build the bowls. Divide noodles between bowls, ladle hot broth over the top, and add crispy pork.
  6. Finish. Halve the soy eggs and place them on top. Add scallions and serve hot.
