Liver and onions

Liver and onions is old-school comfort food done right: tender beef liver, sweet caramelized onions, and simple seasoning that lets the dish hit the way it should.

Ingredients

  • 1 pound beef liver, sliced
  • 1 cup milk, optional, for soaking
  • 2 large onions, sliced
  • 3 tablespoons butter, divided
  • 1 tablespoon oil
  • 1/2 cup flour
  • 1 teaspoon seasoned salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder

Instructions

  1. Soak liver in milk for 30 minutes if desired, then pat dry.
  2. Cook onions in 1 tablespoon butter over medium heat until soft and caramelized. Remove from pan.
  3. Mix flour with seasoned salt, pepper, and garlic powder.
  4. Dredge liver lightly in seasoned flour.
  5. Heat oil and remaining butter in the skillet.
  6. Cook liver 2 to 3 minutes per side, just until browned and cooked through.
  7. Top with onions and serve warm.
