Patacones with garlic sauce

Patacones are crispy, salty, twice-fried green plantains that belong next to almost anything saucy.

Ingredients

  • 2 green plantains
  • Oil, for frying
  • Salt, to taste
  • 1/2 cup mayonnaise
  • 2 tbsp sour cream
  • 1 garlic clove, finely grated
  • 1 tbsp lime juice
  • 1 tbsp chopped cilantro
  • Black pepper, to taste

Directions

  1. Peel plantains and cut into 1-inch pieces.
  2. Heat oil in a skillet over medium heat. Fry plantain pieces until lightly golden, about 3 minutes per side.
  3. Remove and flatten each piece with a cup or plate.
  4. Return flattened plantains to the oil and fry again until crisp and golden.
  5. Season immediately with salt.
  6. Mix mayonnaise, sour cream, garlic, lime juice, cilantro, and pepper for the sauce.
  7. Serve patacones warm with sauce.

Mood Messy Tip

Green plantains are the key here. Sweet ripe plantains will not crisp the same way.
