Patacones are crispy, salty, twice-fried green plantains that belong next to almost anything saucy.
Ingredients
- 2 green plantains
- Oil, for frying
- Salt, to taste
- 1/2 cup mayonnaise
- 2 tbsp sour cream
- 1 garlic clove, finely grated
- 1 tbsp lime juice
- 1 tbsp chopped cilantro
- Black pepper, to taste
Directions
- Peel plantains and cut into 1-inch pieces.
- Heat oil in a skillet over medium heat. Fry plantain pieces until lightly golden, about 3 minutes per side.
- Remove and flatten each piece with a cup or plate.
- Return flattened plantains to the oil and fry again until crisp and golden.
- Season immediately with salt.
- Mix mayonnaise, sour cream, garlic, lime juice, cilantro, and pepper for the sauce.
- Serve patacones warm with sauce.
Mood Messy Tip
Green plantains are the key here. Sweet ripe plantains will not crisp the same way.
