These red beans and pork feet bring traditional slow-cooked flavor into the pressure cooker. The beans turn creamy, the pork gets tender, and the whole pot tastes like big comfort food without waiting all day.
Ingredients
- 1 pound dried red beans, rinsed
- 1 to 1 1/2 pounds pork feet, cleaned
- 1 onion, diced
- 1 bell pepper, diced
- 3 celery ribs, diced
- 4 cloves garlic, minced
- 1 teaspoon smoked paprika
- 1 teaspoon Cajun seasoning
- 1 bay leaf
- 6 cups water or broth
- Salt and hot sauce, to taste
- Cooked rice, for serving
Instructions
- Add beans, pork feet, onion, bell pepper, celery, garlic, seasonings, bay leaf, and water or broth to the pressure cooker.
- Cook on high pressure for 45 minutes.
- Let pressure release naturally for at least 15 minutes, then release remaining pressure.
- Remove bay leaf. Stir and mash some beans to thicken the pot.
- Season with salt and hot sauce.
- Serve over rice.
