These pressure cooker red beans are creamy, hearty, and topped with smoky sausage. You get that all-day comfort food flavor in a much shorter cook.
Ingredients
- 1 pound dried red beans, rinsed
- 12 ounces smoked sausage, sliced
- 1 onion, diced
- 1 bell pepper, diced
- 3 celery ribs, diced
- 4 cloves garlic, minced
- 1 teaspoon Cajun seasoning
- 1 teaspoon smoked paprika
- 1 bay leaf
- 6 cups chicken broth or water
- Cooked white rice, for serving
- Hot sauce, optional
Instructions
- Add beans, sausage, onion, bell pepper, celery, garlic, seasonings, bay leaf, and broth to the pressure cooker.
- Cook on high pressure for 40 minutes.
- Let pressure release naturally for at least 15 minutes.
- Remove bay leaf and mash some beans to thicken.
- Serve over rice with hot sauce if desired.
