Pressure cooker red beans and rice with smoked sausage

These pressure cooker red beans are creamy, hearty, and topped with smoky sausage. You get that all-day comfort food flavor in a much shorter cook.

Ingredients

  • 1 pound dried red beans, rinsed
  • 12 ounces smoked sausage, sliced
  • 1 onion, diced
  • 1 bell pepper, diced
  • 3 celery ribs, diced
  • 4 cloves garlic, minced
  • 1 teaspoon Cajun seasoning
  • 1 teaspoon smoked paprika
  • 1 bay leaf
  • 6 cups chicken broth or water
  • Cooked white rice, for serving
  • Hot sauce, optional

Instructions

  1. Add beans, sausage, onion, bell pepper, celery, garlic, seasonings, bay leaf, and broth to the pressure cooker.
  2. Cook on high pressure for 40 minutes.
  3. Let pressure release naturally for at least 15 minutes.
  4. Remove bay leaf and mash some beans to thicken.
  5. Serve over rice with hot sauce if desired.

  • If the beans are not creamy enough, simmer uncovered after pressure cooking.
