Smoked BBQ chicken thighs

These chicken thighs are simple, juicy, and finished hot enough to get the skin and edges just right.

Ingredients

  • 8 bone-in chicken thighs
  • 1 tbsp olive oil
  • 2 tbsp BBQ rub
  • 1 tsp garlic powder
  • 1/2 tsp black pepper
  • 1/2 cup BBQ sauce

Directions

  1. Pat chicken dry. Rub with olive oil, BBQ rub, garlic powder, and pepper.
  2. Heat smoker to 275 degrees F.
  3. Smoke chicken skin-side up for about 1 hour.
  4. Brush with BBQ sauce and increase heat to 375 degrees F.
  5. Cook 15 to 25 minutes more, until the internal temperature reaches 175 degrees F and the skin is nicely set.
  6. Rest 5 minutes before serving.

Mood Messy Tip

Thighs are best a little past 165 degrees F because they get more tender as the connective tissue breaks down.
