These chicken thighs are simple, juicy, and finished hot enough to get the skin and edges just right.
Ingredients
- 8 bone-in chicken thighs
- 1 tbsp olive oil
- 2 tbsp BBQ rub
- 1 tsp garlic powder
- 1/2 tsp black pepper
- 1/2 cup BBQ sauce
Directions
- Pat chicken dry. Rub with olive oil, BBQ rub, garlic powder, and pepper.
- Heat smoker to 275 degrees F.
- Smoke chicken skin-side up for about 1 hour.
- Brush with BBQ sauce and increase heat to 375 degrees F.
- Cook 15 to 25 minutes more, until the internal temperature reaches 175 degrees F and the skin is nicely set.
- Rest 5 minutes before serving.
Mood Messy Tip
Thighs are best a little past 165 degrees F because they get more tender as the connective tissue breaks down.
