Smoked jalapeno popper chicken

This smoked jalapeno popper chicken gives you creamy, cheesy, smoky flavor without stuffing anything.

Ingredients

  • 4 large chicken breasts or 6 boneless thighs
  • 1 tbsp olive oil
  • 2 tbsp BBQ rub
  • 8 oz cream cheese, softened
  • 1 cup shredded cheddar
  • 2 jalapenos, thinly sliced
  • 6 slices cooked bacon, chopped
  • 2 tbsp chopped green onions

Directions

  1. Heat smoker to 275 degrees F.
  2. Rub chicken with olive oil and BBQ rub.
  3. Smoke chicken until it reaches about 150 degrees F internally.
  4. Mix cream cheese and cheddar, then spoon it over the chicken.
  5. Add jalapenos and bacon. Continue smoking until chicken reaches 165 degrees F.
  6. Top with green onions and rest 5 minutes before serving.

Use boneless thighs if you want extra juicy chicken and a little more forgiveness on the smoker.
