This smoked jalapeno popper chicken gives you creamy, cheesy, smoky flavor without stuffing anything.
Ingredients
- 4 large chicken breasts or 6 boneless thighs
- 1 tbsp olive oil
- 2 tbsp BBQ rub
- 8 oz cream cheese, softened
- 1 cup shredded cheddar
- 2 jalapenos, thinly sliced
- 6 slices cooked bacon, chopped
- 2 tbsp chopped green onions
Directions
- Heat smoker to 275 degrees F.
- Rub chicken with olive oil and BBQ rub.
- Smoke chicken until it reaches about 150 degrees F internally.
- Mix cream cheese and cheddar, then spoon it over the chicken.
- Add jalapenos and bacon. Continue smoking until chicken reaches 165 degrees F.
- Top with green onions and rest 5 minutes before serving.
