Smoked meatloaf

This smoked meatloaf keeps the cozy classic flavor but adds a smoky BBQ finish.

Ingredients

  • 2 lb ground beef
  • 1 cup breadcrumbs
  • 2 eggs
  • 1/2 cup milk
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 2 tbsp Worcestershire sauce
  • 1 tbsp BBQ rub
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup ketchup
  • 1/4 cup BBQ sauce
  • 1 tbsp brown sugar

Directions

  1. Heat smoker to 250 degrees F.
  2. Mix beef, breadcrumbs, eggs, milk, onion, garlic, Worcestershire, BBQ rub, salt, and pepper.
  3. Shape into a loaf on a sheet of foil or a grill-safe pan.
  4. Smoke for about 2 hours, until the center reaches 150 degrees F.
  5. Mix ketchup, BBQ sauce, and brown sugar. Brush over the loaf.
  6. Continue smoking until the internal temperature reaches 160 degrees F.
  7. Rest 10 minutes before slicing.

Shape the loaf wide and not too tall so it cooks evenly and gets more smoky edges.
