These stovetop lentils and potatoes are simple, hearty, budget-friendly, and full of comfort. Everything simmers together until the lentils are tender and the potatoes soak up the flavor.

Ingredients

  • 1 cup brown or green lentils, rinsed
  • 2 potatoes, diced
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon oil
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 4 cups broth or water
  • Salt and black pepper, to taste
  • Cilantro or parsley, optional

Instructions

  1. Heat oil in a pot and cook onion until softened.
  2. Add garlic, cumin, and paprika. Stir for 30 seconds.
  3. Add lentils, potatoes, and broth.
  4. Bring to a boil, then reduce to a simmer.
  5. Cook 30 to 40 minutes, until lentils and potatoes are tender.
  6. Season with salt and pepper and finish with herbs if using.
