Sweet and sour pork with peppers and pineapple

This sweet and sour pork is loaded with crispy pork, colorful peppers, juicy pineapple, and a glossy sauce that gives it that better-than-takeout flavor.

Ingredients

  • 1 pound pork tenderloin or pork loin, cut into bite-size pieces
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup cornstarch
  • Oil, for frying
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 cup pineapple chunks
  • 1/2 cup pineapple juice
  • 1/3 cup ketchup
  • 1/4 cup rice vinegar
  • 1/4 cup brown sugar
  • 1 tablespoon soy sauce

Instructions

  1. Season pork with salt and pepper, then coat with cornstarch.
  2. Fry pork in hot oil until golden and crisp. Drain on paper towels.
  3. In a skillet, cook bell peppers for 2 to 3 minutes.
  4. Whisk pineapple juice, ketchup, vinegar, brown sugar, and soy sauce.
  5. Pour sauce into the skillet and simmer until glossy.
  6. Add pineapple and crispy pork, then toss until coated.
  7. Serve hot over rice.
