1. Crockpot Salsa Verde Chicken Tacos

Ingredients
- 2 lb boneless skinless chicken breasts or thighs
- 16 oz salsa verde
- 4 oz can diced green chiles
- 1 tsp cumin
- 1 tsp garlic powder
- 1/2 tsp onion powder
- 1 tsp kosher salt, plus more to taste
- 1/2 tsp black pepper
- Juice of 1 lime
- Corn or flour tortillas
- Toppings: cilantro, cheese, avocado, sour cream, lime wedges
Directions
- Add chicken, salsa verde, green chiles, cumin, garlic powder, onion powder, salt, and pepper to the crockpot.
- Cook on low for 4 to 6 hours or high for 2 to 3 hours, until the chicken shreds easily.
- Shred the chicken in the sauce, then stir in lime juice.
- Serve in warm tortillas with your favorite toppings.
2. Crockpot Mississippi Pot Roast

Ingredients
- 3 to 4 lb chuck roast
- 1 packet ranch seasoning
- 1 packet au jus gravy mix
- 6 to 8 pepperoncini peppers
- 1/4 cup pepperoncini juice
- 1/2 cup unsalted butter, sliced
- 1 tsp black pepper
- Optional: carrots and baby potatoes
Directions
- Place the roast in the crockpot. Add carrots and potatoes if using.
- Sprinkle ranch seasoning and au jus mix over the beef.
- Add pepperoncini, pepperoncini juice, black pepper, and butter slices on top.
- Cook on low for 8 hours or high for 4 to 5 hours.
- Shred the beef into the juices and serve warm.
3. Crockpot Creamy Chicken Tortellini Soup

Ingredients
- 1 1/2 lb boneless skinless chicken breasts
- 4 cups chicken broth
- 1 cup diced carrots
- 1/2 cup diced celery
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 tsp Italian seasoning
- 1 tsp salt
- 1/2 tsp black pepper
- 9 oz refrigerated cheese tortellini
- 1 cup heavy cream
- 2 cups fresh spinach
- 1/2 cup grated parmesan
Directions
- Add chicken, broth, carrots, celery, onion, garlic, Italian seasoning, salt, and pepper to the crockpot.
- Cook on low for 5 to 6 hours or high for 3 hours.
- Shred the chicken and return it to the crockpot.
- Stir in tortellini, cream, spinach, and parmesan.
- Cook 20 to 30 minutes more, until tortellini is tender.
4. Crockpot BBQ Pulled Pork Sandwiches

Ingredients
- 3 to 4 lb pork shoulder or pork butt
- 1 tbsp brown sugar
- 1 tbsp smoked paprika
- 2 tsp garlic powder

- 1 1/2 tsp salt
- 1 tsp black pepper
- 1 cup BBQ sauce, plus more for serving
- 1/2 cup apple juice or chicken broth
- Toasted buns, pickles, and coleslaw
Directions
- Mix brown sugar, paprika, garlic powder, onion powder, salt, and pepper. Rub all over the pork.
- Place pork in the crockpot with apple juice or broth.
- Cook on low for 8 to 10 hours or high for 5 to 6 hours.
- Shred the pork, discard extra fat, and stir in BBQ sauce.
- Serve on toasted buns with pickles and coleslaw.
5. Crockpot White Chicken Chili

Ingredients
- 1 1/2 lb boneless skinless chicken breasts
- 2 cans white beans, drained

- 1 tsp salt
- 1/2 tsp black pepper
- 4 oz cream cheese
- 1/2 cup sour cream

Directions
- Add chicken, beans, corn, green chiles, broth, and seasonings to the crockpot.
- Cook on low for 5 to 6 hours or high for 3 hours.
- Shred the chicken and stir it back into the chili.
- Add cream cheese and sour cream. Cook 15 to 20 minutes, stirring until creamy.
- Serve with toppings.
