  • 1 tsp kosher salt, plus more to taste
  • 1/2 tsp black pepper
  • Juice of 1 lime
  • Corn or flour tortillas

Directions

  1. Add chicken, salsa verde, green chiles, cumin, garlic powder, onion powder, salt, and pepper to the crockpot.
  2. Cook on low for 4 to 6 hours or high for 2 to 3 hours, until the chicken shreds easily.
  3. Shred the chicken in the sauce, then stir in lime juice.
  4. Serve in warm tortillas with your favorite toppings.

2. Crockpot Mississippi Pot Roast

Ingredients

  • 3 to 4 lb chuck roast
  • 1 packet ranch seasoning
  • 1 packet au jus gravy mix
  • 6 to 8 pepperoncini peppers

  • 1/2 cup unsalted butter, sliced
  • 1 tsp black pepper
  • Optional: carrots and baby potatoes

Directions

  1. Place the roast in the crockpot. Add carrots and potatoes if using.
  2. Sprinkle ranch seasoning and au jus mix over the beef.
  3. Add pepperoncini, pepperoncini juice, black pepper, and butter slices on top.
  4. Cook on low for 8 hours or high for 4 to 5 hours.
  5. Shred the beef into the juices and serve warm.

3. Crockpot Creamy Chicken Tortellini Soup

Ingredients

  • 1 1/2 lb boneless skinless chicken breasts
  • 4 cups chicken broth
  • 1 cup diced carrots
  • 1/2 cup diced celery

  • 3 cloves garlic, minced
  • 1 tsp Italian seasoning
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 9 oz refrigerated cheese tortellini
  • 1 cup heavy cream

Directions

  1. Add chicken, broth, carrots, celery, onion, garlic, Italian seasoning, salt, and pepper to the crockpot.
  2. Cook on low for 5 to 6 hours or high for 3 hours.
  3. Shred the chicken and return it to the crockpot.
  4. Stir in tortellini, cream, spinach, and parmesan.
  5. Cook 20 to 30 minutes more, until tortellini is tender.

4. Crockpot BBQ Pulled Pork Sandwiches

Ingredients

  • 3 to 4 lb pork shoulder or pork butt
  • 1 tbsp brown sugar
  • 1 tbsp smoked paprika
  • 2 tsp garlic powder

  • 1 1/2 tsp salt
  • 1 tsp black pepper
  • 1 cup BBQ sauce, plus more for serving
  • 1/2 cup apple juice or chicken broth

Directions

  1. Mix brown sugar, paprika, garlic powder, onion powder, salt, and pepper. Rub all over the pork.
  2. Place pork in the crockpot with apple juice or broth.
  3. Cook on low for 8 to 10 hours or high for 5 to 6 hours.
  4. Shred the pork, discard extra fat, and stir in BBQ sauce.

5. Crockpot White Chicken Chili

Directions

  1. Add chicken, beans, corn, green chiles, broth, and seasonings to the crockpot.
  2. Cook on low for 5 to 6 hours or high for 3 hours.
  3. Shred the chicken and stir it back into the chili.
  4. Add cream cheese and sour cream. Cook 15 to 20 minutes, stirring until creamy.
  5. Serve with toppings.
